Kombucha 2.0 - SCOBY's, Flavoring, and Tonics

Are you brewing kombucha, but not sure how it’s going? Are you wanting to take your brewing skills to the next level? Come out under the oaks at Finca Tres Robles and take a deeper dive into brewing kombucha. It is a remarkably simple process, but a more rounded understanding of it’s quirks and processes can help you achieve the beverage you so desire.

Topics covered in this class: -Explore and taste the wide variety of flavoring options: herbs, fruit, and even vegetables -How to achieve more of that delightful effervescent fizz -What does a healthy SCOBY look like (bring your SCOBY!) -How to divide the SCOBY’s to create more batches -Brewing with different ingredients (types of tea, coffee, honey) -Brew timing - sour vs sweet -How to make a tonic: sour + honey + fizz = yum -How to make a cocktail: virgin and adult :) -Troubleshooting with your homebrew

So bring your kit from home and bring your questions. We will have time for people to share their brew stories and ask the questions they have always wondered about this mysterious process.

Instructor: Andrew Cobb has been teaching fermentation in the Houston area for a few years. He focuses on Wild Yeast/Bacteria Fermentation as taught by Sandor Katz. His classes are engaging, passionate, informative and eye opening. For him, teaching fermentation in the city is a chance to celebrate and appreciate the wisdom of folks who live off the land and understand that their knowledge is as valuable as what is taught in universities.
